How to determine HP 570 print speeds

My company has had a 570 Latex for a few weeks and we would like to know how we can determine the sq ft per hr we’re getting out of the printer.

We aim to be printing at -least- 150sq ft/hr (10 passes) and up to 245sq ft/hr (6 passes) if the quality is sufficient. The above numbers are based on HP's chart for this printer.

Can anyone give us guidance on what file to use, what size media to use (36 inch? 60 inch?), how to test the speed at different passes or any other feedback to determine the sq ft per hr? Our sales dept and estimator needs to know the real life capabilities of and how to price jobs output from this machine .
